Peanut Butter Kiss Cookies


 You will need:

1 1/2 cups flour
1/2 cup granulated sugar
1/2 cup brown sugar
1 tsp baking soda
1/2 tsp salt
1/2 cup salted butter (1 stick)
3/4 cup peanut butter
1 egg
2 tbs milk
1 tsp vanilla
1 bag of Hershey's Kisses
1 cup super fine granulated sugar (set aside)

Ok a little bit about ingredients. You can go out and buy everything listed, bake your cookies and that will be that....OR you can take my advice and enter into pb cookie heaven. Listen up!

All ingredient are not created equal. I recommend using the following:

Organic whole milk
GOOD Vanilla ( I use Rodelle pure vanilla extract) Whatever you decide just don't use imitation...ick
Organic eggs
Organic butter (I love Kate's Homemade)
I use JIF peanut butter ( I have tried them all, this tastes the best)

Got it? Good.
Preheat your oven to 350 degrees and let's get mixing!

In a medium sized bowl combine flour, salt, and baking soda and set aside.

* I use a kitchen aid mixer, I am sure this is all doable by hand, but this is where my laziness comes in.

Add room temperature butter and peanut butter to large mixing bowl and cream together. Next add egg. Let egg mix in completely, before adding the vanilla and milk. Mix for about 1 more minute.

Add both white and brown sugar.  Give it a good mix.

You now have a bowl of creamy peanut buttery goodness.

Add your dry ingredients a half cup at a time letting your dough mix for apx 30 seconds in between.

WahLahhh you have pb cookie dough.

You could stop here and make plain pb cookies, but what fun would that be? What is peanut butter without chocolate?

Unwrap your kisses ( I usually enlist someone else to do this). Make sure they are unwrapped before the cookies go into the oven.

Grab the super fine sugar you set aside. I pour it into a little bowl, but a plate would work too.

Take a heaping table spoon of dough and roll it into a ball. Roll about 3/4 of the ball into the sugar leaving just the bottom uncovered. Place onto ungreased cookie sheet.

When your cookie sheets are full, pop them into the oven for 10 - 12 minutes. The tops should start to form little cracks, when they are ready. Don't over bake them or they will get hard.

Immediately after you take them out place a kiss on each cookie and press in just a tad.  Let them sit for a minute or two before transferring to cooling racks.
